Southern exposure.

Soil :

Soil composed of deep and shallow marl.

In the vineyard :

Mechanical weeding
Manual harvesting

Grape varieties : Chardonnay 100%.
Average age of vines : 45 years

VINIFICATION & AGEING

Winemaking :

Gentle pressing with a pneumatic press. Static settling for 12-48 hours.
Transfer to barrels after settling. Alcoholic and malolactic fermentation in
barrel.

Ageing :

Aged 11 months in barrels of 2 to 6 wines.

Alcohol content : 13.4% vol. – Residual sugar : 0.72 g/l
