Soil :

Hard limestone at shallow depths. Southeast exposure.

In the vineyard :

Mechanical weeding. Manual harvest.

Vineyard surface area : 1 ha
Average age of vines: 30 years

VINIFICATION & AGEING

Winemaking :

Gentle pressing with a pneumatic press. Static settling for 12-48
hours.

Alcoholic fermentation at 18°C – indigenous yeast – followed by
malolactic fermentation.

Ageing :

Aged 100% in vats.

Alcohol content : 12.7% vol.
