Located in the commune of Davayé, the upper part of the parcel faces
south-east and the lower part faces north.

Soil :

Residual clay with few stones at the top of the plot and shallow limestone
at the bottom.

In the vineyard :

Mechanical weeding.
Manual harvest.

Grape varieties : Chardonnay 100%.
Vineyard area : 0.52 ha
Average age of vines : 45 years

VINIFICATION & AGEING

Winemaking :

Gentle pressing with a pneumatic press. Static settling for 12-48 hours at
15°.

Alcoholic fermentation at 18°c – indigenous yeast – followed by malolactic
fermentation. Sulfur-free vinification.

Yield : 55 hL/ha Production volume : 2000

Ageing :

Aged 10% in new barrels and 90% in vats.

Alcohol content : 13.3% vol. – Residual sugar : 0.5 g/l
